Passion for cult Cheltenham pancakes sees new store opening in Gloucester

Independent pancake cake store, Sisu Pancakes, is bringing a new kiosk to Gloucester Quays to satisfy soaring demand for its unique pancake cakes.

When Sisu Pancakes opened its first store in Cheltenham in September 2021, it was to a queue around the block for three solid months.

Three years later, the pancake patisserie cakes are proving so popular, Sisu is opening a kiosk at Gloucester Quays this November 2024.

Revealing the news at the launch event for Cheltenham Food + Drink Week, organised by Cheltenham BID and Visit Cheltenham, owner and founder Laura Evans spoke of her excitement for the future.

Taking to the stage at The Queens Hotel alongside TV presenter Simon Rimmer, she said: 'I have a huge customer base in Gloucester and I owe a lot to them. I've had a pop up in Gloucester for a while now and they buy everything.

'Setting up the shop in Cheltenham was a risk, the new Gloucester kiosk is a thank you to my loyal customers.'

Laura, who has four employees, spoke to the audience of around 50 food fans about the importance of lifestyle balance in hospitality. She also praised Cheltenham restaurant Nagomi for its brilliant Korean hot pot and £10 bargain lunch deals.

She said: 'I'd like to see more people support the high street and I'd also like to see more people come from small ideas, hopes and dreams to establish new business success.'

Artist impressions of the new kiosk show a pretty pink design with tall stools to enjoy a sweet treat, overlooking trays of pancake cake patisserie slices.

Sisu's signature stacked pancake cakes are also available in Selfridges Food Hall at Birmingham Bullring, having been stocked there since April 2024.

In a recent post on social media, Laura said: 'Selfridges is one of my most proudest achievements ever. I'm still not over this and do not think I ever will be. Supplying Selfridges is a dream come true, we just love seeing our Sisu slices in the bakery.'
