New Prithvi cookbook reveals secrets behind Michelin Guide dishes

A fine-dining, Indian-inspired restaurant in the heart of Cheltenham has published a highly-anticipated cookbook this January 2025 — enabling guests to recreate their favourite recipes at home.

Award-winning Cheltenham restaurant, Prithvi, has published its first cookbook this January 2025, revealing the secrets behind some of its most successful dishes since opening in 2012.

Having had many customers ask for the recipes of delicious dishes over the years, Prithvi’s head chef, Tom Law, a 2-Michelin star trained chef with experience in some of the world’s best kitchens, spearheaded the creation of the cookbook alongside Prithvi’s owner Jay Rahman.

The result is a cookbook packed with more than 50 unique recipes from Prithvi’s Michelin Guide-featured menus, giving guests the chance to serve up the contemporary Indian cuisine they have experienced at the restaurant in their own kitchens.

Some of the indulgent recipes include crab and scallop ravioli with curry beurre blanc, oscietra and caviar, charcoal puri with whipped cod roe and Furikake, and tandoori duck breast with peas, ricotta and bergamot.

Tom said: 'Creating the cookbook has been a wonderful way to share a part of Prithvi with those who want to recreate our dishes at home.

'It’s exciting to offer the local community the opportunity to bring a little bit of the Prithvi experience into their own kitchens.'

Jay added: 'We’re excited to finally be able to offer our guests the chance to recreate some of their most loved dishes since Prithvi’s inception 12 years ago.

'Tom has done an incredible job in pulling the book together, and it’s something we’ve been wanting to do for years, so to see it finally be available is special for all involved at Prithvi.

'The cookbook is a vibrant celebration of our unique culinary journey, blending Indian-inspired flavours with modern European techniques.

'Featuring a collection of thoughtfully curated recipes, from signature dishes to hidden gems, this book invites guests to get creative in their own kitchens. We hope people will have just as much fun in creating the recipes as we did.'

Prithvi's innovative menu blends Indian cuisine with modern gourmet approaches, resulting in dishes with a contemporary twist.

The cookbook costs £45 and is available to buy from the restaurant on Bath Road in Cheltenham.
