First look: Inside new nature inspired Cotswolds restaurant

Wildling restaurant has arrived at Minster Mill in Minster Lovell, bringing the outdoors in, as well as encouraging guests to gather in fire pit-lit gardens for hot chocolates and s'mores.

New Cotswolds restaurant Wilding celebrates nature and local produce.

In a fresh chapter for Minster Mill hotel, it's introduced a new nature inspired restaurant that's open to everyone.

Newly revealed Wilding, tucked away in in the Cotswolds village of Minster Lovell, welcomes locals, walkers and families, as well as hotel guests, for a bite to eat and to make the most of its outdoor firepits.

With nature at the heart of the new design, tables are decorated with fresh herbs and greenery.

Napkins are presented with fresh springs of rosemary from the gardens, window sills are covered with plants and there's a huge tree branch resting next to the roaring fire.

The characterful dining space that was once a barn, features vaulted ceilings and original oak beams with a menu that makes the most of the best seasonal and regional ingredients.

Supporting local farmers and artisan producers, Wilding’s head chef, Andrew Campbell, blends contemporary and traditional British cooking with a local twist.

Breakfast includes a continental offering, with overnight oats and pastries amongst the selection on offer, alongside cooked-to-order favourites such as bacon sandwiches and scrambled eggs with smoked salmon, as well as treats including sweetcorn fritters with chorizo and fried duck egg. 

Lunch and dinner offers a choice of small dishes, ideal for sharing, as well as larger plates such as Hawkstone cider pork cheek, stone bass with mussels, roasted cauliflower and apple and delicious desserts including lavender pannacotta with yoghurt sorbet.

For those not immediately ready to go home after dinner, on each evening throughout the year there are also ‘fireside moments’ to make the most of, with the option to end a meal with a warm treat such as a gingerbread latte or spiced hot chocolate with Kraken black spiced rum by an open fire in the gardens.

Diners also have the option of getting involved in making DIY s’mores with the restaurant's marshmallow kit. 

Wildling is open from Wednesday to Sunday for breakfast and from Tuesday to Saturday for lunch, afternoon tea and dinner.

Bookings are advised, although walk-ins are also welcomed.
