Gloucester Food Dock has announced the latest name to join what will eventually be a 15-strong list of food and drink outlets, bars and mini restaurants in place for its planned opening date at the end of the summer 2022.

London-based burger restaurant Chuck, which has outlets in the capital’s King’s Cross and the trendy Brick Lane area, has joined the line-up at the hotly anticipated waterside development, just off Gloucester city centre.

It is understood Cheltenham-based chef, Lewis Spencer, whose name will be familiar to customers at Cheltenham’s Holee Cow restaurant, will head up the team at the new Chuck.

Ladybellegate Estates, which is behind the £3.5 million scheme, said it was thrilled to announce the news and expected to be able to make more announcements in the very near future.

‘Chuck’s food is absolutely incredible. It is going to be a wonderful addition. They also do a range of cocktails and slushies as well and are really going to target the brunch market, which is great as the food dock is going to be an all-day offer,’ said a spokeswoman for Ladybellegate Developments.

SoGlos was unable to reach the owners of Chuck for comment, but its London menus ranged from its Chuck and Cheese beef burgers and Miss Piggy pulled pork with double beef, to Mexican-themed chicken burgers, salads and vegan burgers, too – including its Bandito black bean patty, plant-based No Clucking Katsu and Jack The Fruit.

Its King’s Cross menu also features sweet potato hash, pancakes, breakfast enchilada, sourdough with avocado and poached eggs, and fruit-flavoured cocktails – including its Peach ‘n’ Tea, a Beefeater peach and raspberry gin and iced tea mix.

Chuck joins Gloucestershire’s own Sibling Distillery, Strip Steak Bar, Wholly Gelato and artisan pizza business, Bella Mia, which have already officially committed to the forthcoming foodie destination.

Gloucester Food Dock also recently announced that a milestone in the development had been reached with the arrival of all of the steel structure that will become the glass-fronted eateries and roof-top dining areas.
